Yellow Tea

Yellow teas are semi fermented teas, this kind of tea only produce in China. Semi fermented tea mostly made in Hunan, Anhui and Zheijiang, smaller amounts are produced in Sichuan and Jiangxi. So, yellow tea is a Chinese traditional tea.

To produce yellow tea, is a use small leaf green tea bush. Green tea production by quickly dried after firing, while yellow teas are piled and partially fermented after firing and then ready drying process, in order to remove grassy and sharp notes common in green tea. The unique on producing yellow tea, yellow tea pile fermentation process convert tea polyophenols into complex tea polyphenols known as “tea flavins,” which yield a yellow pigment in the tea leaf, creating a golden infusion.

Many kind of tea in the world just differ by the tea color, such as green, yellow, white, oolong (blue green), red and black tea. The different yellow tea with others that yellow tea have smooth, savory, sweet, and unique fruity and fermented aromas, and have similar antioxidant health benefits to green tea but with smoother palate.
